Ingredients Melanchina

200 g feta cheese

2 long eggplants

4 zucchini

6 long tomatoes, not too ripe

10 fresh basil leaves

1 l milk

2 tablespoons flour

Coarse salt



300 cl olive oil or sunflower

Preparation Melanchina
Preparation: 1 hour
Cooking time: 40 min
Step 1
Cut the aubergines into very thin slices.
Step 2
Place a layer in a drainer, sprinkle with coarse salt, place another layer of aubergines, coarse salt, etc.
Step 3
Finally, place a weight on it and let it drain for 1 hour; do the same with the tomatoes.
Step 4
Clean the courgettes, then grate them finely.
Step 5
Heat the milk. Dissolve the flour in a little cold water, then add it to the milk. Add a little more flour to obtain a pasty consistency. Season with salt, pepper and spice to taste.
Step 6
Clean aubergines and tomatoes thoroughly.
Step 7
Heat the oil, to fry the slices of augergine until they change colour. When taking out the aubergines, put some sopalin underneath and above.
Step 8
In an ovenproof dish, put a layer of bechamel, a layer of aubergines, a layer of tomatoes, all the basil leaves, a layer of béchamel, grated zucchini, a layer of feta cheese (in strips), a layer of béchamel, and a last layer of aubergines.
Step 9
Place it in the oven for 40 minutes at 180°C (thermostat 6).
