Melon tartar - ham

1 well perfumed melon
250 g thickly sliced raw ham (or heel)
2 tablespoons olive oil
Fresh basil
Pepper
2 tablespoons of port (optional)

Step 1
- Cut the ham into very small cubes. Use a sharp knife to get clean cut squares. You can also use scissors, it's very practical.
Step 2
- Cut the meon into quarters and remove the bark. Cut each quarter into slices, each slice into sticks and then into squares equivalent to ham squares.
Step 3
- In a bowl, mix the olive oil, fresh basil, port and pepper. Add the melon and ham.
Step 4
- Leave to macerate in the fridge for at least 1/2 hour (maximum 2 hours, after the melon loses too much juice) and place in verrines.
