6 red peppers

3 peeled tomatoes (or a small can of peeled tomatoes)

6 tablespoons mascarpone

1 onion

2 cloves of garlic

1.2 l vegetable stock

Oil

Fresh basil

Salt

Pepper

Step 1
Preheat the oven to 230°C (thermostat 7-8). Place the peppers on a sheet of baking paper and cook for 30 minutes. Then put them in a bowl and cover with film and leave them to stand for 15 minutes until they cool down enough to be handled.
Step 2
In a large saucepan, sauté the chopped onions and garlic for 3-4 minutes. Add the tomatoes and broth that has come to a boil, lower the heat and simmer for 10 minutes.
Step 3
Meanwhile, peel and seed the peppers. Mix with the soup, add the mascarpone and a few basil leaves and blender until smooth, season and add 1 or 2 basil leaves for decoration.
