Pistou Express Soup

Number of people

1 large box of vegetable stew

1 large can of white beans

Medium potatoes

handle of shells

Olive oil

Grated Parmesan cheese

1 clove of garlic (to taste)

Fresh or frozen basil (depending on the season)

Step 1
In a saucepan, pour the vegetable mixture, the rinsed white beans, the potatoes cut into small cubes, cover with water and salt. Add a drizzle of olive oil and when the water boils, add the shells. Leave to cook over low heat for about ten minutes.

In the meantime, prepare the express pistou:

in a bowl pour the parmesan cheese (half the bag or even the whole bag if you have good eaters at the table, lovers of sunny cuisine). Pour one to two spoonfuls of olive oil, chopped basil (the same, at your convenience), chopped garlic, then pour a ladle of the soup broth (without vegetables of course). You need to have some kind of ointment.
Step 4
Serve hot with one or two spoonfuls of pistou added to the plate.
