2 eggplants
150 g fresh goat cheese
Fresh basil
Olive oil

Cooking time: 30 min
Step 1
Wash the aubergines, wipe them dry and dice them.
Step 2
Heat 2 tablespoons of olive oil in a frying pan and add the eggplant cubes.
Step 3
Simmer 15 min, then add the fresh goat cheese and a few basil leaves.
Step 4
Season with salt, pepper and mix well; cook for another 15 minutes.
Step 5
Garnish with basil leaves and serve hot.
Author's note
This pan can be served as a side dish to meat or as a stuffing for pies, lasagna, bricks or omelettes.
