Quinoa salad, mango and cashew nut

Quinoa salad, mango and cashew nut

250 g quinoa

1 zucchini

1 mango

1 sprig of fresh basil

70 g cashew nuts

1 lime

1 orange

Rest: 20 min
Cooking time: 15 min
Step 1
Put the quinoa in 1/2 litre of salted water.
Step 2
Cook until boiling, reduce over medium heat, cover and simmer 10 to 15 min until all the water has been absorbed.
Step 3
Mix with a fork and let cool.
Step 4
Finely chop the basil.
Step 5
Peel and dice the mango.
Step 6
Peel and remove the seeds from the courgette, and cut it into thin strips.
Step 7
Coarsely crush the cashews with a knife or mortar.
Step 8
In a bowl, mix the quinoa with the rest of the ingredients.
Step 9
Salt, and keep in a cool place.
Step 10
Just before serving, add the lemon and orange juice
Author's note
You can replace the mango with fresh apricots. Cashew nuts can be replaced by almonds and/or pistachios.
