RABBIT AT THE PROVENCALE (MariO style)

2 onions

2 cloves of garlic
1 small bunch of parsley
1 sprig of thyme
4 bay leaves
fresh or frozen basil leaf
20 black olives

Step 1
1) Cut the rabbit.
Step 2
2) In a cast iron casserole dish, brown the onions, over medium heat, minced in a little oil and margarine; add the red and green peppers cut into thin strips; the onions must not be golden, they must remain transparent; reserve.
Step 3
3) Roast the rabbit pieces; set aside; discard the fat that has just been used; deglaze the casserole with a little cold water.
Step 4
4) Return the rabbit pieces to the pan; add the onion-pepper mixture, peeled and seeded tomatoes, chopped garlic, chopped parsley and basil, thyme, bay leaf and black olives; salt and pepper; cover with water; put the lid on; simmer for 1 to 1.5 hours depending on the size of the rabbit.

5) At the end of cooking, remove the rabbit pieces, place them on a serving plate and keep them warm; remove the thyme and bay leaves; dilute in cold water a little cornstarch; pour into the cooking juice; let thicken; serve immediately and enjoy.
