Salmon tartar with basil

Salmon tartar with basil

Number of people

80 g fresh salmon (as fresh as possible!)

1/2 tablespoon olive oil

1/2 teaspoon balsamic vinegar

10 g fresh or frozen basil

1/4 shallot

1 teaspoon soy sauce

Preparation: 15 min
Step 1
Cut the salmon into slices of about 0.5 cm, then make cubes of about 0.5 cm, set aside in a refrigerated dish.
Step 2
Slice the shallot as finely as possible and set aside.
Step 3
Slice the basil (do not chop it, it will lose its taste) as finely as possible (freezing it is easier and faster), set aside in the same bowl as the shallot.
Step 4
Add the olive oil, balsamic vinegar and soy sauce to the shallot and basil mixture, this will be our "vinaigrette".
Step 5
Mix the vinaigrette with the salmon cubes and leave to marinate for about 30 to 45 minutes.
Step 6
Serve chilled with a sprig of lamb's lettuce or arugula.
Author's note
Do not prepare, mix the vinaigrette and salmon more than 30 min in advance otherwise it will "cook" the salmon. Enjoy your appetite!
