3 zucchini

2 tablespoons olive oil

1 sprig of fresh basil

Pepper

Cooking time: 5 min
Step 1
Wash and finely chop the basil leaves.
Step 2
In a bowl, marinate the chopped basil leaves with olive oil.
Step 3
Bring a large volume of water to a boil. Throw the whole courgettes into boiling water (this is very important: if you cut the courgettes, you will get 3 sponges).
Step 4
Wait 5 minutes after the boil has resumed and then take the courgettes out of the pan to put them under cold water.
Step 5
Cut the tender and roasted courgettes into thin slices.
Step 6
Mix the courgettes in the salad bowl with the basil-flavoured oil. Season with salt and pepper.
Step 7
Serve chilled.
Author's note
The advantage of this recipe is the way it is cooked: courgettes are neither soft nor hard. Seasoning is optional: try it with fresh crushed garlic, cottage cheese, chives, or a classic vinaigrette...
