Zucchini mint-basil-cream

Zucchini mint-basil-cream

Number of people

6 courgettes

6 fresh mint leaves

5 fresh basil leaves

25 cl of 25% liquid cream

1 half cube of chicken broth

2 tablespoons olive oil



Preparation: 20 min
Cooking time: 20 min
Step 1
Wash, peel (not completely) and dice the courgettes.
Step 2
In a frying pan, heat the olive oil and sear the courgettes for about 3 to 5 minutes. Season with salt and pepper.
Step 3
Add a little water and crumble the half cube of chicken broth.
Step 4
Cover and simmer over low heat for 15 minutes.
Step 5
Wash, dry and finely chop the mint and basil, then add to the zucchini.
Step 6
Bring to a boil (without burning, of course!) so that the cream can be absorbed by the flavours of the aromatic herbs.
Step 7
Adjust the seasoning if necessary.
Step 8
Enjoy your meal!
Author's note
The zucchini finally takes from the chest thanks to the aromatic herbs! As an accompaniment to white meats or fish.
