Beef carpaccio with basil

1 kg of beef

1 lemon

Olive oil

Fresh Parmesan cheese

Step 1
Have the butcher slice the beef into very thin strips. You can also cut it yourself with a sharp knife, in which case place the meat in the freezer 30 minutes before cutting.
Step 2
Place the slices on large plates and set aside in the refrigerator for 30 minutes.
Step 3
Before serving, emulsify the lemon juice with about 10 cl of olive oil, salt and pepper. Sprinkle the carpaccio with the sauce, place some parmesan shavings and chopped basil leaves on top and serve.
Author's note
Serve with seasoned green salad and fried potatoes.
