Bites of mozzarella scampi

Bites of mozzarella scampi

Number of people

18 medium-sized scampi

4 tablespoons flour

1 teaspoon curry powder

1 teaspoon of ginger powder,

1 stick

3 cloves of garlic

4 tomatoes

18 slices of mozzarella (about 375g)

1 bunch fresh basil

10 cl olive oil

Step 1
Shell the scampi. Mix the flour with the spices in a plastic bag. Add the scampi.
Step 2
Close the bag, place it on your work surface and knead it so that the scampi are well coated with flour.
Step 3
Cut the bread into 2 cm thick slices. Place them in an ovenproof dish.
Step 4
Peel and mince the garlic. Heat a little solo and olive oil in a frying pan and sauté the garlic. Then pour over the bread slices.
Step 5
Cut the tomatoes and mozzarella into slices. Remove the basil leaves.
Step 6
Sauté the scampi in oil.
Step 7
Place a slice of tomato, a slice of mozzarella, a basil leaf and a scampi on top of the bread slices.
Step 8
Mix olive oil with lemon juice. Add salt and pepper, pour into the dish.
Step 9
Place the dish in a preheated oven at 200°C for 10 minutes. The mozzarella must be just melted.
Step 10
Arrange these bites on small plates. Garnish with a few basil leaves and serve immediately. Serve with a glass of Beaujolais
