Eggplants rolled with goat cheese

1 eggplant

1/2 goat log

Olive oil

Balsamic vinegar

Honey

fresh basil leaf

Pepper

Salt

Cooking time: 15 min
Step 1
Wash the eggplant, cut it into thin slices (bevelled so that the slices are elongated).
Step 2
Mix in a hollow plate oil (2/3) and vinegar (1/3), salt and pepper.
Step 3
Soak the eggplant slices in this mixture to soak them, then place them on an ovenproof baking sheet. Grill for about 15 minutes. (160°).
Step 4
Place a little honey (to taste), a basil leaf and a slice of goat cheese on each eggplant slice. Roll up and place a toothpick to hold it all together.
Step 5
Reheat 5 min. in the oven if necessary, can be eaten cold.
