Fresh melon - goat salad

Number of people

300 g mesclun salad

1 melon

2 firm tomatoes

200 g fresh goat cheese

4 slices of Italian ham

12 fresh basil leaves
For seasoning:

Olive oil

Balsamic vinegar



Preparation: 20 min
Step 1
In a salad bowl, prepare a vinaigrette and put the mesclun in it: mix it well with the vinaigrette and place it on 4 plates.
Step 2
(keep the salad bowl with the mesclun vinaigrette base)
Step 3
Cut the melon in 4, empty it, peel it and cut it into cubes: place on the mesclun.
Step 4
Cut the tomatoes in 4, remove the seeds, then cut them into very small cubes (5 mm) and soak them in the mesclun vinaigrette base: scatter on the plates.
Step 5
Cut the fresh goat cheese into small cubes and arrange the plates on the mixtures.
Step 6
Add the Italian ham to each plate (either whole slice or slices).
Step 7
Make a vinaigrette (1 tablespoon of balsamic vinegar, 3 tablespoons of olive oil, salt and pepper) and pour a small spoon of it on the preparation of the plates.
Step 8
Finally cut 8 basil leaves and scatter over the mixtures and decorate the plates with a basil leaf.
Step 9
Serve chilled.
