600 g Thai rice

Small grain rice

100 g pork loin

1 piece of 3/4 cm fat bacon, chopped

2 boneless chicken legs, cut into small pieces

2 tablespoons of oil (soya, peanut...)

1 piece of ginger 5 cm long

4 cloves of garlic, crushed

2 teaspoons chopped small red peppers

2 spring onions, chopped (white and half of green)

250 leaves fresh basil, chopped

125 g fresh coriander, chopped

1 tablespoon of fish

2 spoons of soy sauce

Preparation: 25 min
Cooking time: 20 min
Step 1
Steam the rice. Keep it in the fridge all day (or all night).
Step 2
Cut the pork into cubes (3/4 cm).
Step 3
Heat the oil in a thick-bottomed frying pan (or better still, in a wok). And brown the grated ginger, peppers, garlic, and bacon.
Step 4
Only 2 minutes, without stopping stirring!
Step 5
Then add the pork and chicken, for 3 min, while stirring.
Step 6
After untangling the cold rice in his hands, to make it fluid. Add it to the pan, and let it heat up, stirring several times.
Step 7
When ready (about 10 min), add the fish and soy sauces, onions, basil, and coriander.
Step 8
Stir and serve immediately.
Author's note
If you don't like spicy dishes, remove the seeds from the inside of the peppers. If you find Thai basil, it's even better!
