4 pork chops in the backbone

1 egg
For marinade or mustard mayonnaise:

3 tablespoons of mustard

Olive oil qsp (sufficient quantity for) a large mayonnaise

20 cl white wine (close-up or Alsace or nutmeg)

3 fresh basil leaves (or dry, if not available)

Coarse salt

Step 1
The day before, prepare a very mustardy mayonnaise: mix the egg yolk, mustard and olive oil in a bowl. Do not salt. Instead of vinegar, gently add the white wine. Stop before the mayonnaise becomes too liquid. Add the very finely chopped basil.
Step 2
Dip the pork chops in, they must be covered. Place everything in the refrigerator and leave to marinate overnight.
Step 3
The next day, take the ribs out of the marinade. Sprinkle with coarse salt before serving them in the very hot embers of your barbecue.
Step 4
Let them cook 2 times 3 minutes on each side and spread generously with the marinade before turning them over the second time.
Step 5
If you have any wine left over from grilling your pork chops, serve it as a side dish.
Author's note
Advantage: the marinade even makes the raw ribs soft.
