Number of people

1 kg of potatoes (Bintje)

400 g flour

1 egg

1 tablespoon of oil

50 g butter or margarine



For the sauce

150 g butter (or margarine)

100 g grated parmesan cheese

Fresh or frozen basil

Preparation: 40 min
Cooking time: 10 min
Step 1
Peel the potatoes and cook them. Put them in the vegetable mill and add the butter or margarine in small pieces. In a bowl, mix the egg, nutmeg, oil and salt. Add the mashed potatoes and flour. Work together to obtain a smooth dough.
Step 2
Divide the dough into 4 pieces.

Form 4 long, thin rolls.
Step 4
Flour them and cut them into 1 cm pieces and give them a gnocchi shape by crushing them with a fork in your hand.
Step 5
Poach the gnocchi in a large amount of salted simmering water. When they come to the surface, they are cooked. Drain them.
Step 6
Melt all the butter or margarine in a saucepan. Put the gnocchi in a large dish.
Step 7
Sprinkle them with melted butter or margarine. Add the parmesan cheese and chopped basil. Pepper.
Step 8
Mix and serve the gnocchi immediately.

You can serve them with a tomato sauce.
