2 eggs

250 g flour

100 g mozzarella cheese

200 g ricotta cheese

50 g Parmesan cheese

Fresh basil


Olive oil (for frying)



Preparation: 30 min

Step 1
Sift the flour and make a fountain. Add a little salt, water, and knead until you obtain a consistent dough. Continue to knead it, if possible for half an hour.
Step 2
Let the dough rest for 1 hour.
Step 3
Cut the mozzarella into small cubes. In a bowl, combine the ricotta cheese, eggs, parmesan cheese, basil and a little pepper. Add the mozzarella cheese.
Step 4
Divide the dough into twelve. And spread each dough piece in discs, about 4 to 5 mm thick.
Step 5
Proceed as for ravioli. Spread the stuffing on one side of the discs, and moisten the edges.
Step 6
Fold the discs over, and form half moons. Press down on the edges to close them tightly.
Step 7
Fold the dough over if necessary, so that the stuffing does not leak during cooking. Cut the edges with a ravioli knife to make it look more attractive.
Step 8
Heat a lot of oil in a large frying pan. Fry the panzerotti, three by three, so that they are golden brown. It only takes a few minutes.
Step 9
Place them on absorbent paper to remove excess oil.
Step 10
The original recipe is that panzerotti are fried, but they can probably be baked in the oven, preheated to 180°C (thermostat 6), for about 30 minutes.
Step 11
Enjoy a hot meal!!!!! As a starter or main course, with a salad.

It's so good. You can put anything you want in these slippers: ham, salami, other cheeses, peperoncini, pesto, etc.... They can even be made sweet with jam, nutella, chestnut cream, etc....
