Lobsters on a bed of spinach

Lobsters on a bed of spinach

Number of people

4 lobsters or lobsters

400 g fresh spinach

1 bunch of fresh basil

100 g cherry tomato

3 shallots

2 handfuls of nuts (or any of them, hazelnuts, almonds or cashews, depending on your taste)

Olive oil

Balsamic vinegar

Preparation: 30 min
Cooking time: 30 min
Step 1
Cook the lobsters (immerse them in cold salted water, then cook them for 20 minutes from the time the water boils).
Step 2
Cut cherry tomatoes in half. Heat spinach (water or microwave).
Step 3
Cut the shallots and fry them in olive oil with a large handful of nuts (or almonds, cashews, hazelnuts...).
Step 4
Make a vinaigrette with olive oil, basamic vinegar, salt and pepper.
Step 5
Cut the lobsters into pieces and fry them in a pan.
Step 6
Arrange the drained spinach on the plates, sprinkle with fresh basil leaves, add the tomatoes, lobster sections and then the vinaigrette.
