Ingredients Niçoise Salmon Galettes

4 potatoes

300 g fresh or canned salmon

1 egg

6 dried tomatoes preserved in oil

8 black olives

1/2 clove garlic, crushed

3 tablespoons of olive oil

2 tablespoons fresh or frozen basil

1 pinch of cayenne pepper knife

Cooking time: 40 min
Step 1
Start by cooking the potatoes as you usually do. Personally I steam them for about 30 minutes when they are large.
Step 2
Do the same with the salmon or open the can (in this case drain it).
Step 3
Pat the tomatoes dry and cut them into small pieces.
Step 4
The same goes for olives.
Step 5
When the potatoes are cooked, (and peeled) crush them with a fork and add the olive oil. Salt, but if you use canned salmon, take it easy.
Step 6
Spice to your taste.
Step 7
Add the salmon, still crushing with a fork, add the garlic, tomatoes, olives and basil.
Step 8
Make sure that the mixture is well homogeneous.
Step 9
Form small patties by flattening them with the hand (2 per person).
Step 10
Put them in a beaten egg and then in the breadcrumbs.
Step 11
Then you have the choice of browning them in a frying pan in hot olive oil or putting them under the grill of the oven, but under close supervision!
Author's note
You can add more olives or tomatoes to suit your taste. Serve with a nice, well seasoned salad.
