1 eggplant

1 roll of puff pastry

5 tomatoes

1 onion

1 clove of garlic

1 pinch of Espelette pepper

4 fresh basil leaves

Gruyère cheese




Preparation
TOTAL TIME: 1 HR
Preparation: 30 min
Cooking time: 30 min
Step 1
Grill the aubergine: cut it into slices, place them in a dish, brush with olive oil, salt and pepper.
Step 2
Bake for 25 min at 180°C (thermostat 6).
Step 3
Turn the slices over halfway through cooking.
Step 4
A quarter of an hour after baking the aubergines, bake the dough white after pricking it with a fork.
Step 5
Prepare the tomato sauce: in a frying pan brown the minced onion, pressed garlic clove, chilli pepper and then add the tomato, mondayed and diced.
Step 6
Add the basil once the tomatoes have been reduced to a sauce.
Step 7
Make the pie: spread the sauce on the dough, then arrange the eggplant slices, add cheese to taste.
Step 8
Bake in the oven for about 8 min (until the Gruyère cheese is browned).
Author's note
If you don't have time to prepare the tomatoes, replace them with canned peeled tomatoes.
