Sole fillets in a tomato nest

For the dish:

8 sole fillets

8 firm tomatoes

100 g semi-salted butter

8 fresh basil leaves

4 tablespoons chopped parsley

Pepper from the mill

Cooking time: 15 min
Step 1
Preheat the oven to 150°C.
Step 2
Immerse the tomatoes in boiling water for 20 seconds, remove the skin, then cut off the top and empty them. Place them in a hollow ovenproof dish, add a little salt and pepper to the inside of the tomatoes, before adding a nice fresh basil leaf.
Step 3
Sprinkle each filet of sole with 1/2 tablespoon of chopped fresh parsley, season with salt and pepper, roll and place in each tomato.
Step 4
Place half the quantity of butter cut into pieces on each tomato.
Step 5
Put 15 minutes in the preheated oven, remove and place the rest of the butter cut into pieces on the hot fillets.
Step 6
It is even better served with a small mashed potatoes mixed with a good amount of chopped fresh chervil.
Author's note
Very quick preparation, very light meal. You can replace butter with olive oil, but it's better with butter.
