300 g fresh spinach

400 g ricotta or bush

2 eggs

1 bunch of fresh mint

1 bunch of fresh basil

1 clove of garlic

75 g smoked bacon (optional)

2 puff pastry pastries

Cooking time: 20 min
Step 1
Preheat the oven to 200°C (thermostat 6-7).
Step 2
Roll out a first dough in a pie dish. Precook the dough for 10 minutes in the oven.
Step 3
Meanwhile, wash the spinach well and brown the minced garlic with the bacon in a little olive oil.
Step 4
Slice the fresh basil and mint and place them in the bottom of the pre-baked dough.
Step 5
Mix the ricotta in a bowl with a whole egg, salt and pepper. Place spinach leaves (uncooked) in the bottom of the pie. Add the golden bacon and spread a layer of ricotta cheese. Add a new layer of spinach leaves, finish with a second layer of ricotta cheese. Cover everything with the second pie shell, seal the edges by pinching the edges all along. Decorate the top of the pie with egg yolk.

Bake in the oven for 20 min.
