Tomato tartar - mozzarella

8 tomatoes

1 scoop of mozzarella (with buffalo milk, it's better)

1 jar of pesto

10 fresh basil leaves

Sherry vinegar

Mustard

Olive oil

Pepper

Salt



Preparation

Preparation: 30 min
Step 1
Scald the tomatoes, peel and dice them.
Step 2
Cut the mozzarella into small cubes as well.
Step 3
Chop the basil leaves.
Step 4
Mix the ingredients in a bowl.
Step 5
Add 1 tablespoon of pesto, 1 tablespoon of Savora, 1 teaspoon of sherry vinegar and 1 tablespoon of olive oil. Season with salt and pepper, then mix.
Step 6
Place the preparation in small ramekins (or whisky glasses), and keep cool for at least 1 hour.
Step 7
Just before serving, prepare a side sauce by mixing 1 tablespoon of pesto, 2 or 3 tablespoons of olive oil and 1 tablespoon of water.
Step 8
Turn the ramekins out onto a plate and sprinkle with a little sauce around; decorate with a basil leaf.
