400 g courgette

4 eggs

20 cl of liquid fresh cream

Fresh basil, chopped

Pepper

Salt

Cooking time: 45 min
Step 1
Preheat your oven to 180°C (thermostat 6).
Step 2
Peel and cut the courgettes into pieces, then place them in the blender bowl with the washed basil leaves and puree them.
Step 3
In a bowl, lightly beat the eggs with the cream, salt and pepper, then mix with the zucchini purée. Mix for 30 seconds and pour the mixture into a buttered cake pan.
Step 4
Place the pan in a double boiler and bake in a hot oven for 45 minutes.
Author's note
Serve the flan unmoulded and topped with tomato sauce.
