4 veal cutlets

4 eggs

80 g grated parmesan cheese

10 fresh basil leaves

Flour

Frying oil

Pepper 5 berries

Salt

Cooking time: 5 min
Step 1
Finely chop the basil leaves.
Step 2
Beat the eggs into an omelette in a bowl with 3 tablespoons of water. Stir in the parmesan and basil and beat again to obtain a fairly thick mixture.
Step 3
Place flour on a shallow plate and flour the cutlets well.
Step 4
Then dip them in the egg/parmesan/basil mixture so that it is well covered.
Step 5
Heat oil in a frying pan and place the escalopes.
Step 6
Cook for 2 to 3 minutes on each side, add salt and pepper. The cutlets are cooked when they have a nice golden crust.
Step 7
Serve hot with fresh tagliatelle.
