Cheddar-chorizo risotto

Cheddar-chorizo risotto

2 onions

1/2 spicy chorizo

75 g extra mature cheddar cheese

250 g special risotto round rice

1 drizzle of olive oil

1 half of poultry broth

1 pinch of saffron

Fresh basil for decoration

Preparation: 15 min
Cooking time: 30 min
Step 1
Cut the onions into small cubes and fry them in olive oil.
Step 2
Once the onions are browned, add the rice until it becomes translucent.
Step 3
Then add water to the level, then the stock cube and cook.
Step 4
Once the water is almost evaporated, add the chorizo to give it colour.
Step 5
Then add the coarsely diced cheddar cheese and saffron.
Step 6
Here it is, it's ready, enjoy it!
