1 spoonful of olive oil

375 g chicken cut into thin strips

1 red pepper, 1 green and 1 yellow cut into thin strips

1 onion, chopped

2 cups of mushroom cut into 4 pieces

2 cloves garlic, finely chopped

3/4 teaspoon of salt

1/2 teaspoon pepper

1/2 tablespoon red wine vinegar

4 cups of cooked penne

1 jar marinated artichoke heart, drained and sliced

1/2 cup grated parmesan cheese

1 tablespoon chopped fresh basil

Cooking time: 15 min
Step 1
In a non-stick skillet, heat the oil and brown the chicken, remove the chicken from the skillet and put it on hold.
Step 2
Add the peppers, mushrooms, onion and garlic to the pan and cook for 6 minutes.
Step 3
Add salt, pepper and basil and cook for 1 minute.
Step 4
Return the chicken and add the wine vinegar and mix well.
Step 5
Add the penne and mix.
Step 6
Add artichokes, parmesan cheese and mix well together.
