Cream of carrot with coriander

Cream of carrot with coriander

Number of people

200 g carrot

50 g butter

1 tablespoon flour

1 tablespoon icing sugar

1 tablespoon lemon juice

2 shallots, minced

2 pressed oranges

20 cl water

2 pinches of ground coriander

1 clove garlic, crushed

20 cl of low-fat cream

Fresh chopped basil for decoration



Preparation: 15 min
Cooking time: 30 min
Step 1
Grate the carrots.
Step 2
In a skillet melt the butter. Sprinkle with flour and icing sugar and thicken without caramelizing.
Step 3
Moisten with the lemon juice and simmer for 5 minutes.
Step 4
Add the garlic and shallot and glaze gently for a few minutes.
Step 5
Add the carrots, stir gently for a few moments, then sprinkle with the juice of the two oranges and add the water to cover the preparation.
Step 6
Season with salt, pepper, coriander and cook without covering for about 20 minutes.
Step 7
Mix with the crème fraîche, making sure to set aside before 1 tablespoon of carrots to put them back into the texture preparation after mixing.
Step 8
Spoon into verrines or tequila glasses.
Step 9
Decorate with chopped basil.
Step 10
Place in the refrigerator and serve very fresh!!!!!!!!
