Filet of saithe with basil, lime & vanilla

2 saithe fillets

1 lime

1 teaspoon balsamic vinegar

fresh basil leaf

1 pod of liquid vanilla extract

4 tablespoons of olive oil

Cooking time: 12 min
Step 1
Place the fillets in a small dish or hollow plate.
Step 2
In a small bowl, mix 3 tablespoons of olive oil, the zest of a lime, the juice of half a lime, 1 teaspoon of balsamic vinegar, a few leaves of chopped basil, the seeds of a vanilla pod or a few drops of vanilla extract, salt and pepper.
Step 3
Coat the fillets on each side with the vinaigrette obtained.
Step 4
Cook the fillets in a non-stick pan, 6 minutes on each side.
Step 5
Arrange on the plates, adding a little chopped basil and fleur de sel.
Author's note
Serve with green beans and whole grain rice.
