Italian-style eggplant pasta

Italian-style eggplant pasta

Number of people

400 g macaroni or penne

2 eggplants

1 handful of pine nuts

1 clove of garlic

1 bunch of fresh basil

Olive oil



Preparation: 30 min
Cooking time: 40 min
Step 1
Heat a large pot of salted water and add a tablespoon of olive oil.
Step 2
Fry the eggplants cut into slices in 4 tablespoons of olive oil in a frying pan (they must be well cooked), salt them.
Step 3
Meanwhile, crush in a mortar or small bowl a spoon of olive, a large handful of pine nuts, garlic and basil.
Step 4
Pour this mixture into the eggplants and sauté.
Step 5
When the pasta is cooked, add it to the eggplant-basil-pine nut mixture.
Step 6
Sauté, salt and pour a few drops of fresh olive oil.
Step 7
Serve hot.
