8 ripe tomatoes

4 cloves of garlic

2 shallots

Olive oil

White and black ground pepper

Step 1
Unlike many chefs, I invite you not to peel the tomatoes or remove the seeds....
Step 2
Cut the tomatoes into 16 halves. Put them on the oven tray at 180°C for 1 hour, sprinkled with olive oil.
Step 3
When the tomatoes are cooked, heat a large saucepan over medium heat, add half a glass of olive oil. When it is steaming, add the cloves of garlic cut into coarse strips, the shallots cut into slices, then stir vigorously with a wooden spoon, so as not to burn the flavours.
Step 4
Then add the tomatoes cut into strips, then reduce over low heat for half an hour, making sure that it does not burn.
Step 5
At the end of cooking, remove from the heat and add cold olive oil and basil to taste. Season with salt and pepper to taste.
