Pasta coll'achhia (pasta with cold tomato coulis)

Number of people

800 g fresh pasta (preferably spaghetti or capellini)

2 cans of diced tomato pulp

10 cl olive oil

5 cloves of garlic

Fresh or frozen basil



Preparation: 5 min

Step 1
Boil a pot filled with salt water.
Step 2
Crush the garlic (previously peeled) with a pestle.
Step 3
In a bowl, put the 2 cans of tomato pulp, add the crushed garlic, chopped basil and olive oil.
Step 4
Season with salt and pepper.
Step 5
Put the pasta to cook according to the expected cooking time (they are fresh pasta, so 3-4 min generally).
Step 6
Drain them and put them back in the pot.
Step 7
Cover with a few ladles of cold sauces.
Step 8
Serve immediately, turning each plate over with a little sauce and grated parmesan cheese.

It may seem surprising to serve a cold sauce on hot pasta, but believe me, experience it, you will tell me about it. In addition, it is a dish that can be prepared in a few minutes... for evenings when you don't necessarily want to prepare food: it's royal! Beware of the second "garlic cloves" effect!!!!! Enjoy your meal.
