For pizza dough (or 1 roll of dough):

400 g flour

1 cube of baker's yeast

1 large pinch of salt

1/2 glass of warm water
For the garnish:

2 cans of concentrated tomato sauce

4 mozzarella balls (or 2 large ones)

Fresh or frozen basil (a good handful of leaves)

4 egg yolks

Step 1
First prepare the pizza dough:

In a bowl, mix the flour and salt; dig a small well, and pour in the water-yeast mixture previously diluted.
Step 3
Mix with your hands until you obtain a compact, non-sticky ball (if it is too sticky, add a little flour and mix again).
Step 4
Cover the bowl with a cloth and let stand for 30 to 40 minutes.

Meanwhile, preheat the oven to 210°C (thermostat 7).

Prepare the filling:

In a large bowl, dilute the tomato sauce with water and add salt, pepper and basil. Cut the mozzarella into coarse cubes and set aside.

Once the dough is well inflated, reform 4 distinct balls and spread them out.
Step 9
Pour a large ladle of tomato basil sauce over each and a good handful of mozzarella, then place the egg yolk.
Step 10
Fold the dough in half over, moisten the edges and press them to make them stick.
Step 11
Pour a little bit of tomato sauce on top and put it in the oven for 20 to 30 minutes.
