Rabbit lacquered with basil

Rabbit lacquered with basil

Number of people

1 rabbit (ask your butcher to cut it into pieces)

1 tray of fresh tagliatelle

1 bunch of fresh basil

1/2 jar of liquid honey

1/2 jar dehydrated green pepper

2 tablespoons olive oil

1 jar of fresh cream (about 20 cl)

Lemon juice (buy the squeezed lemon juice sold in the small plastic lemons, it's very convenient)

Cooking time: 1 h
Step 1
Prepare the marinade: place the liquid honey, oil, lemon, lime, green pepper and finely chopped basil in a bowl. Season the marinade with salt and pepper.
Step 2
Place the rabbit in an ovenproof dish, season the rabbit pieces with salt and pepper, and cover with the marinade.
Step 3
Bake and cook over medium heat for a maximum of 1 hour. When the rabbit pieces are nicely caramelized, it's done.
Step 4
Cook the fresh pasta. When cooked, remove the rabbit pieces from the dish and reserve them in the serving dish (covered with aluminum foil to keep warm). Leave the marinade in the oven.
Step 5
In the baking dish in the oven, add a jar of fresh cream and reduce for about 5 minutes. Remove from the oven and mix if the crème fraîche is not completely melted.
Step 6
Coat the rabbit with the sauce and set aside part of it to coat the fresh pasta.
