Salad with sweet and sour wheat pastel

Number of people
For the salad:

350 g pre-cooked durum wheat

250 g corn

3 tablespoons fennel, cut into thin slices

1 clementine, diced

100 g peeled pink shrimp
For cooking wheat:

1 bag Earl grey tea with bergamot

1/2 sugar cube

For the sauce

2 tablespoons of citrus juice

3 tablespoons of olive oil

fresh basil leaf, chopped

Cooking time: 10 min
Step 1
Infuse the tea in the future wheat cooking water with the sugar and salt.

In a bowl mix olive oil with salt, pepper and basil.

Once the tea is brewed, put the wheat to cook (but it must remain firm).

Mix the other ingredients of the salad with the citrus juice.

Once cooked, put the wheat under very cold water, then add it to the rest of the ingredients; Pour the olive oil into the basil and mix well.

Adjust the seasoning and serve.

The shades of the salad are very soft, and its rather original and fresh taste is perfect in summer. Accompanied by crab bites, this salad was a success!
