Number of people

4 salmon steaks

25 cl white wine

25 cl water

1 onion

1 pinch of salt

1 pinch of pepper
For the sauce:

15 g butter

25 cl fresh basil

12 cl dry white wine

12 cl fish stock or vegetable broth

12 cl thick fresh cream

2 shallots

Preparation of the sauce:

Melt the butter and melt the shallots in it, which you have previously finely chopped.

Slice the basil leaves and add them to the shallots. Cook for 2 minutes, stirring occasionally.

Pour in the white wine and bring to a boil.

Reduce heat and simmer for a few minutes.

Add the fish stock and fresh cream, and cook over low heat for a few minutes.

Blend the sauce in a blender for a smoother consistency.

Adjust the seasoning if necessary.

Mince the onion and simmer with the white wine and water. Bring to a boil.

Place your salmon steaks in the pan, add water if necessary so that the salmon steaks "bathe" halfway in the liquid. The cooking juice must be barely simmering.
