Scallops with pumpkin cream

Number of people

16 scallops or scallops

1 kg of pumpkin

2 carrots

1 onion

250 g fresh cream

30 cl veal stock

150 g butter

1 pinch of salt

1 pinch of pepper

1 sprig of fresh basil

Step 1
For the pumpkin cream:

Clean the pumpkin, onion and carrots and cut into cubes. In 50 g of butter, brown the chopped onion. Add the chopped carrots, pumpkin and veal stock. Cover. Let cook over medium heat for 15 minutes. Mix to obtain a creamy cream. Add the crème fraîche.

For scallops:

Cook in a buttered frying pan for 1 min on each side. Season with salt and pepper. Serve the pumpkin cream on hot plates, then arrange the scallops. Garnish with basil.
Author's note
I prepare this delicious pumpkin cream with scallops because they are cheaper but it is much better with scallops.
