Number of people

400 g smoked bacon

1 strong chorizo (or sweet for less spicy)

4 chicken broth cubes

1 large can of peeled tomatoes

1 can of peas (280 gr)

1 can of white beans (400 gr)

5 carrots

1 zucchini

3 onions

4 cloves of garlic

3 potatoes

3 stalks of celery

1 bunch of flat-leaf parsley

sprig of fresh basil

170 g pasta (shells or other small pasta)

4 spoons of oil (olive for me)

2.5 l water

1 large tablespoon of Provence herbs

Grated Parmesan cheese

Preparation: 30 min
Cooking time: 45 min
Step 1
To begin, peel the carrots and cut them into small cubes, then cut the part of the celery stalk without the leaves into cubes too, as well as the potatoes, zucchini and onions.
Step 2
Peel the garlic, cut it in half to remove the germ and cut it into small pieces.
Step 3
Slice the chorizo into slices half a centimetre thick and then cut each slice in half.
Step 4
Heat the oil in a casserole dish or large pot, add the bacon and chorizo and cook for about 5 minutes, stirring constantly.
Step 5
Add onions, carrots, celery, garlic and potatoes, stir until the vegetables turn a little red.
Step 6
Add the water, the broth cubes, the peeled tomato can that you have coarsely cut and add the juice, salt, pepper and herbs of Provence.
Step 7
From the boiling point lower the heat to medium and cook for about 1/2 hour.
Step 8
All this part can be done before in the morning for the evening or for the moment.
Step 9
Chop the parsley and basil and set aside.
Step 10
Drain the peas and beans and add them to the casserole.
Step 11
Put the pasta in and respect the cooking time indicated on the package.
Step 12
Add parsley and basil and stir, leave out of the heat for 5 minutes with the lid on.
Step 13
Server and generously add the Parmesan cheese.
