Surprise snails

Number of people

4 snails

4 cloves of garlic

10 anchovies in a jar

30 g fresh parsley

1 shallot

25 g tomato paste

150 g salted pork belly

1 cube of beef broth

10 cl of cognac

25 cl water

25 cl white wine

5 g paprika

Fresh thyme

Fresh rosemary

Fresh basil

Olive oil

Preparation: 20 min
Cooking time: 20 min
Step 1
Cut the salted breast into cubes.
Step 2
Crush the anchovies with 2 cloves of garlic.
Step 3
Chop the parsley, thyme, rosemary and basil.
Step 4
Fry 2 cloves of garlic, parsley and shallot in olive oil in a large saucepan (which will contain the snails).
Step 5
Add the tomato paste and diced salted pork belly.
Step 6
Let it all brown.
Step 7
Deglaze with the Cognac.
Step 8
Add white wine, beef broth cube, water, paprika, thyme, rosemary and basil.
Step 9
Add the crushed anchovies.
Step 10
Put the snails in.
Step 11
Simmer for 20 minutes.
