Tabbouleh with mint, parsley and basil

Tabbouleh with mint, parsley and basil

Number of people

500 g fine semolina

4 tomatoes

1/2 bunch of fresh mint

1/2 bunch of fresh basil

1/2 bunch fresh parsley

1 medium onion

3 cloves of garlic

5 juicy lemons

15 cl olive oil

1 large tablespoon of vinegar

1 teaspoon of fine salt

1/2 bag of raisins (optional)

Preparation: 20 min
Step 1
* Cut the tomatoes into small cubes, mix them with the semolina.
Step 2
* Mash the mint, basil and parsley; add to the semolina and mix again.
Step 3
* Mix the onion and 3 cloves of garlic, add and mix.
Step 4
* In a measuring glass, pour 15 cl of oil, add the juice of the 5 lemons, the tablespoon of vinegar, the teaspoon of salt and 5 cl of water (if necessary).
Step 5
* Mix with the semolina, stir well for 5 minutes.
Step 6
* Add the raisins (to taste).
Step 7
* Put in a cool place and stir again for 5 minutes every hour (for 3 hours).
