4 hollowed out trout
6 medium tomatoes
4 onions
40 fresh basil leaves
4 sprigs of rosemary
Thyme (some branches)
Pepper
Salt

Step 1
Cut the tomatoes and onions into rings.
Step 2
In an oven dish, pour a good dose of olive oil.
Step 3
The entire bottom of the dish must be covered.
Step 4
Arrange a bed of onion rings (half of the onions cut into rings), and a bed of tomato rings (half of the tomatoes), in the bottom of the dish. Season with salt and pepper.
Step 5
Place the thyme on top of the tomatoes.
Step 6
Place the basil leaves and rosemary branches inside the trout.
Step 7
Place the trout on the tomato bed.
Step 8
Season with salt and pepper.
Step 9
Cover the trout with the remaining onions and the remaining tomatoes.
Step 10
Pour a small dash of olive oil over the top of the dish.
Step 11
Bake at 220°C for about 30 minutes.
