Tuna tartar with herbs and spices

Tuna tartar with herbs and spices

Number of people

200 g very fresh tuna

1 spoonful of olive oil

1 tablespoon chopped fresh basil

1 tablespoon chopped fresh chervil

1 tablespoon chopped fresh coriander

1 tablespoon mayonnaise

Espelette pepper or chili sauce

Preparation: 10 min
Step 1
Prepare the fillet by removing the skin and nerves.
Step 2
Cut with a knife into 1cm cubes.
Step 3
Put in a bowl, add the oil, mix gently to grease all the tuna pieces, add the basil, chervil, coriander.
Step 4
Season with salt and pepper and add the lemon juice. Let marinate for 10 minutes.
Step 5
Remove the excess lemon, add the mayonnaise, mix gently, then adjust the seasoning by adding the chilli pepper to taste.
Step 6
Serve with toasted toast.

This tartar is prepared with a "feeling" and is often tasted, in order to balance the flavours. It is necessary to keep the taste of tuna, and not to have a dominant grass, nor spice.
