6 fresh tomatoes
4 zucchini

400 g grated Gruyère cheese
200 g tomato sauce
4 medium onions
50 cl béchamel or (if pressed) thick or semi-thick fresh cream

Step 1
If you use onions, sauté them (in a skillet or wok) until they are soft.
Step 2
Cut the tomatoes, add them to the onions, then simmer with herbes de Provence (do not hesitate!), salt and pepper.
Step 3
Cut the courgettes into slices and add them to the mixture.
Step 4
Add tomato sauce (or tomato paste, if not available), and 1 teaspoon powdered sugar (more in winter, when the tomatoes are bland).
Step 5
Simmer the whole thing, about 20 min, over medium heat.
Step 6
Once the mixture is ready, stack it in a large dish:

1 layer of lasagne, 1 layer of preparation, 1 layer of béchamel, 1 layer of gruyère, and so on (adding a little salt each time), putting a lot of gruyère on the last layer.
Step 8
Bake in a hot oven (thermostat 7-200°C), 35 minutes
Step 9
Serve, when it is well gratinated.
Author's note
You can add carrots. Onions are not essential, but they add flux to the consistency. Personally, I sometimes replace the last layer of Gruyère cheese with comté cheese.
