Baby rabbit and chard wrapper

Number of persons

30 g of rabbit (saddle) taken from the family dish

4 sheets of Swiss chard (without ribs)

1 tomato

1 teaspoon of extra virgin olive oil

1/4 lemon

1 thyme

1 pinch of salt

Preparation time: 15 min
Cooking time: 25 min
Step 1
Preheat the oven to 220°C (thermostat 7).
Step 2
Wash the chard leaves carefully by removing the large veins.
Step 3
Steam them for 10 minutes and chop them coarsely with a knife.
Step 4
Wash the tomato, steam it for 2 min, peel it, remove the seeds and crush it coarsely.
Step 5
On a square of greaseproof paper, spread the green chard and crushed tomatoes.
Step 6
Slice the saddle of rabbit very thinly and arrange the slices on top of the vegetables.
Step 7
In a bowl, mix the olive oil with the lemon juice, thyme leaves and a very small pinch of salt. Sprinkle the rabbit regularly with this little sauce.
Step 8
Close in the shape of a papillote.
Step 9
Place in the preheated oven.
Step 10
Cook for 10 minutes at 220°C or steam.
Stage 11
To serve, open the papillote on your baby's plate and spoon it out.

Suitable for a 9-month-old baby.
