110 g butter

15 cl dry white wine

Step 1
Preheat the oven to 210°C (thermostat 7).
Step 2
Heat 2 tablespoons of oil in a casserole dish. Place the flap in it. Brown it for 2 minutes on each side.
Step 3
Put the meat in a dish, sprinkle with coarse salt and bake for 5 to 8 minutes depending on the desired cooking time.
Step 4
When ready, discard the cooking fat but do not rinse the dish. Keep warm under cover.
Step 5
In a frying pan, melt the butter with a little oil over medium heat. Sauté the chopped onions and shallots for 5 minutes. Add the dry white wine and bring to a boil for 10 minutes. Remove the onions and shallots and place them next to the meat. Add a little butter to the sauce, stirring with a whisk. The sauce must have a smooth, thick and smooth appearance. Season with salt and pepper.
Step 6
Spoon sauce over the meat.
