Bavette of sirloin with chilli and peppers

600 g sirloin flap

4 red and yellow peppers

4 carrots

1 shallot

1 West Indian pepper (lantern pepper)

sprig of fresh parsley

4 tablespoons coriander (GO-TAN type)

1 pinch of salt

1 pinch of pepper

Cooking time: 10 min
Step 1
Slice the shallot, peppers and chili pepper. Peel the carrots and cut them into slices.
Step 2
To save time, cut Aloyau's flap into coarse pieces.
Step 3
In a wok (or large frying pan) sauté the vegetables for a few minutes over medium heat. Carrots and peppers should remain crisp. Stir regularly.
Step 4
Finally add the meat and simmer for 5 to 10 minutes depending on the desired cooking time.
