100 g of beaufort

60 g butter

80 g flour

1/2 l milk

4 eggs

Pepper

Salt



Preparation

Preparation: 10 min
Cooking time: 15 min
Step 1
Melt the butter, add the flour and mix.
Step 2
Wet with milk and season.
Step 3
Stir and cook and remove from heat.
Step 4
Stir in the egg yolks, stiffly beaten whites and then the grated beaufort.
Step 5
Pour into a well buttered soufflé dish (or individual ramekins), fill it 3/4 full.
Step 6
Put in a hot oven at 200°C (thermostat 7).
Step 7
Serve immediately after cooking and swelling the soufflé (the time is adjusted according to the dish chosen).
Author's note
It's a soufflé that deflates quickly so you have to cook it at the last minute.
