1 kg of stale bread

75 cl milk

50 g melted butter

250 g grated Beaufort cheese

4 eggs

2 tablespoons of fresh cream

150 g bacon

Pepper

Salt

Nutmeg

Cooking time: 40 min
Step 1
Cut the bread into small pieces in a bowl. Heat the milk, pour it boiling on the bread. Cover and let stand 15 min.
Step 2
Beat the eggs with the cream, melted butter, salt, pepper and nutmeg, then when this mixture is homogeneous add the beaufort (reserve about 50 g). Mix the 2 preparations and pour this mixture into a buttered gratin dish.
Step 3
Cover with the bacon and the rest of Beaufort.
Step 4
Bake for 30 minutes in the oven at 250°C (thermostat 8-9). Serve hot with a green salad.
Author's note
By varying the pleasures, you can also replace the beaufort by comté cheese or other pressed cheese of the same type!
