Number of persons

300 g of bush (or ricotta cheese, if not available)

1 bunch of chard

1 puff pastry

1 egg

50 g grated gruyère cheese (or more, according to your taste)

Step 1
Separate the green part from the white part of the chard and wash them well to remove the soil. Cook the leaves in a little water for a few minutes.
Stage 2
Cook the egg whites in plenty of water for at least 30 minutes (the more it cooks, the better!).
Stage 3
Mix the white part of the chard with the bush. Season with salt and pepper and add nutmeg, then add the egg.
Step 4
Spread the puff pastry in a pie dish and make holes with a fork. Spread half of the chard leaves on the bottom and cover with the chard cream.
Step 5
Finish by covering the whole with the remaining chard leaves and add the grated cheese.
Step 6
Cook at 180°C (thermostat 6) for half an hour.
